The Easiest Gingerbread Pancakes


When I say easy I mean easy! And fun and delicious and definitely a special treat. If you have time to throw ginger snaps, milk, and eggs in a blender you have time for these pancakes. They're not quite the fluffy pancakes you might be used to. They're soft and spicy, thin little cakes. Definitely a Christmas favorite!


 

Ingredients


5 cups ginger snaps

1 1/2 cups milk

1 egg

2 tblsp baking powder


The ginger snaps I used were about an inch wide and I measured them in the cup roughly broken into large pieces, so it's not an exact measurement. I fit 10 cookies per cup, so 50 cookies in total.


All you need to do for this recipe is toss everything into a blender and there you go - pancake batter! Remember, I told you it was easy? Pour straight from the blender into a medium heat pan and cook like you would any other pancakes. We love these with a little honey or blackberry jam. Enjoy!
